- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes. Mix in the vanilla extract and egg until well combined.
- Gradually add the all-purpose flour to the mixture while mixing on low speed until a dough forms, about 2-3 minutes.
- Divide the dough in half. Blend cocoa powder into one half, and color the other half with yellow, pink, and blue food coloring.
- Roll each colored section into logs and combine them with the cocoa dough to create multi-colored shapes.
- Slice the logs into ¼ inch pieces, reshape if necessary, and space them at least 2 inches apart on the baking sheets.
- Bake for 10-12 minutes; edges should be set while the center remains soft.
- Once baked, cool on baking sheets for a few minutes then transfer to a wire rack. Melt chocolate chips for decoration.
- Use melted chocolate to pipe designs onto the cookies.
