Ingredients
  

Crust:
  • 2 cups all-purpose flour
  • 1 cup butter softened
  • ½ cup white sugar
Filling:
  • 1 ½ cups white sugar
  • ¼ cup all-purpose flour
  • 4 eggs
  • Juice of 2 lemons about ½ cup

Method
 

 Prepare the Crust
  1. Preheat the oven to 350°F (175°C).
  2. In a medium mixing bowl, combine the flour, softened butter, and sugar.
  3. Mix until the ingredients form a dough.
  4. Press the dough evenly into an ungreased 9x13-inch baking dish to form a solid crust.
  5. Bake in the preheated oven for 15 minutes, or until lightly golden.
2. Make the Filling
  1. In a separate mixing bowl, whisk together the sugar and flour.
  2. Add the eggs and lemon juice to the sugar-flour mixture. Whisk until smooth.
3. Assemble and Bake
  1. Pour the lemon filling evenly over the baked crust.
  2. Return the dish to the oven and bake for 20 minutes, or until the filling is set but slightly jiggly in the center.
4. Cool and Slice
  1. Let the bars cool completely in the baking dish to allow the filling to firm up.
  2. Slice into squares and dust with powdered sugar if desired.
