Ingredients
  

  • 6 ears fresh corn on the cob kernels removed
  • 4 slices thick-cut bacon diced
  • ¼ cup butter
  • Freshly ground black pepper to taste
  • Salt optional, depending on the bacon’s saltiness
  • Fresh parsley or chives for garnish, optional

Method
 

Prepare the Corn:
  1. Stand an ear of corn upright on a cutting board and use a sharp knife to slice the kernels off. Repeat for all ears of corn. Collect the kernels and any corn milk for added flavor.
Cook the Bacon:
  1. Heat a large skillet over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes.
  2. Transfer the bacon to a plate lined with paper towels, leaving the rendered bacon fat in the skillet.
Sauté the Corn:
  1. In the same skillet, add the butter and let it melt.
  2. Add the corn kernels and corn milk, stirring to coat them in the butter.
Combine and Season:
  1. Stir the crispy bacon back into the skillet with the corn.
  2. Sprinkle with freshly ground black pepper to taste. Add salt only if necessary, as the bacon provides natural saltiness.
Cook Until Tender:
  1. Cook the mixture for 10-15 minutes over medium heat, stirring occasionally, until the corn is tender and lightly golden.
Garnish and Serve:
  1. Remove from heat and transfer to a serving dish. Garnish with fresh parsley or chives if desired.
  2. Serve warm and enjoy!
