  • 4 large eggs
  • 2 English muffins split in half
  • 1 cup shredded cheddar cheese
  • 2 strips cooked bacon chopped
  • 1 green onion chopped
  • Salt to taste
  • Black pepper to taste
  • Cooking spray as needed

Method
 

  1. Prepare the Eggs
  2. Crack the eggs into a small bowl and beat them with a fork.
  3. Spray a skillet with cooking spray and heat over medium heat.
  4. Pour in the eggs and cook, stirring, for 3-5 minutes until set. Set aside.
  5. Toast the English Muffins
  6. Toast the English muffin halves in a toaster until golden brown.
  7. Assemble the Breakfast Pizzas
  8. Place the toasted English muffin halves on a baking sheet.
  9. Divide the scrambled eggs evenly among the muffin halves.
  10. Sprinkle shredded cheddar cheese over the eggs and top with chopped bacon.
  11. Broil to Perfection
  12. Preheat the broiler.
  13. Place the baking sheet under the broiler for 3-4 minutes, or until the cheese is melted and bubbly.
  14. Garnish and Serve
  15. Sprinkle chopped green onion on top of the pizzas.
  16. Season with salt and pepper to taste.
