Ingredients
  

For the Cookie Base:
  • 1 package sugar cookie dough mix or your favorite homemade sugar cookie recipe
For the Creamy Frosting:
  • 8 oz brick cream cheese softened
  • 6 tbsp butter softened
  • 2 cups confectioner’s sugar
  • 1 tsp vanilla extract
  • Pinch of salt
For the Toppings:
  • Assorted fresh fruit blueberries, strawberries, raspberries, kiwis, mandarin oranges

Method
 

  1. Shape & Bake – Preheat the oven according to your cookie dough instructions. Roll out the dough to about ¼-inch thickness and use an egg-shaped cookie cutter to cut out cookies. Bake according to the package or recipe directions. Let them cool completely on a wire rack before frosting.
  2. Prepare the Frosting – In a large bowl, mix softened cream cheese and butter with an electric mixer until light and fluffy. Add vanilla and a pinch of salt. Gradually add confectioner’s sugar, mixing well after each addition until smooth.
  3. Decorate with a Splash of Color – Chop berries and fruit into small pieces. Spread a thick layer of frosting over each cooled cookie. Arrange fruit in fun patterns to resemble beautifully decorated Easter eggs.
  4. Serve & Enjoy – Serve immediately or store in the fridge until ready to enjoy!
