Easter Chocolate Cookies: A Sweet Celebration of Spring

Ingredients
  

  • 160 g unsalted butter melted
  • 100 g white caster sugar
  • 150 g light brown sugar
  • 1 medium egg + 1 egg yolk
  • 1 teaspoon vanilla extract
  • 280 g self-raising flour
  • 1/2 teaspoon salt
  • 200 g chocolate chunks milk, white, or a mix
  • 12 Mini Malteser Bunnies
  • 12 Mini Eggs

Method
 

Make the Cookie Dough:
  1. Melt the butter in a microwave-safe bowl.
  2. Stir in both sugars until fully combined.
  3. Mix in the whole egg, egg yolk, and vanilla extract.
  4. Fold in the flour and salt until a dough forms.
  5. Chop the chocolate into chunks and mix into the dough.
  6. Cover the dough with clingfilm and refrigerate for at least 5 hours (or overnight for best results).
Shape and Bake:
  1. Preheat oven to 180°C fan (200°C conventional).
  2. Let the chilled dough sit at room temperature for 30 minutes.
  3. Scoop out heaped tablespoons of dough and roll into balls.
  4. Place on a lined baking tray, spacing them apart.
  5. Bake for 10 minutes – they should be golden at the edges but soft in the middle.
Decorate and Enjoy:
  1. While cookies are still warm, gently press a Mini Malteser Bunny and a Mini Egg onto each cookie.
  2. Let the cookies cool on the tray for 20 minutes to firm up.

Notes

  • Chilling the dough is essential for achieving thick, chewy cookies.
  • Pressing the decorations onto warm cookies ensures they stick perfectly.
  • Store in an airtight container at room temperature for up to 5 days.
  • For extra indulgence, drizzle with melted chocolate before serving!
