Ingredients

  • 5 oz roasted salted almonds
  • 5 tbsp granulated sugar
  • 3/4 cup unsalted butter softened
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp kosher salt
For Coating:
  • 4 cups powdered sugar

Method
 

Prepare Your Workspace:
  1. Preheat your oven to 325°F (160°C). Line baking sheets with parchment paper for easy cleanup.
Process the Almonds:
  1. Add roasted salted almonds and 1 tablespoon of granulated sugar to a food processor. Pulse until the almonds are finely ground, resembling coarse sand.
Make the Dough:
  1. In a large mixing bowl, beat softened butter, the remaining granulated sugar, and vanilla extract with a mixer until light and fluffy (about 3 minutes). Gradually mix in the flour, kosher salt, and ground almonds until the dough is fully combined.
Shape the Cookies:
  1. Roll the dough into 3/4-inch balls with your hands. Place the balls 1 inch apart on the prepared baking sheets.
Bake:
  1. Bake for 22-26 minutes, rotating the baking sheets halfway through. The cookies are done when the bottoms are light golden brown. Allow the cookies to cool on the baking sheets for about 3 minutes.
Coat the Cookies:
  1. While the cookies are still warm, gently roll them in powdered sugar for the first coating. Allow the cookies to cool completely, then roll them in powdered sugar again for a smooth, luxurious finish.

Notes

  • Store cookies in an airtight container at room temperature for up to 1 week.
  • For longer storage, freeze uncoated cookies for up to 3 months. Roll in powdered sugar after thawing.
