Cookie Preparation
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
- Cream together butter, light brown sugar, and granulated sugar in a large bowl for 3 minutes until light and fluffy.
- Mix in ube halaya and ube extract until combined and light in texture.
- Add the egg and mix until fully incorporated.
- Gradually combine the dry mix with the wet ingredients until just incorporated.
- Fold in the white chocolate chips until evenly distributed.
- Chill dough for at least 1 hour.
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Form cookies using a scoop and place them on baking sheets.
- Bake for about 9-12 minutes until edges are golden, with centers slightly underbaked.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
