Ingredients
  

For the Chicken
  • 2 pounds Chicken sliced into cubes
  • 1 TBSP Cornstarch for tenderizing
  • 1 TBSP Vegetable Oil for marinating
For the Sauce
  • 3/4 cup Soy Sauce low-sodium recommended
  • 3/4 cup Sugar to balance flavors
  • 1/2 cup Garlic crushed
  • 1/4 cup Green Onion chopped
  • 1 TBSP Sesame Oil
  • 1 tsp Red Chili Flakes adjust to taste
  • 1/2 tsp White Pepper or black pepper
For the Coating
  • 1 1/2 cups Flour for coating
  • 1/2 cup Cornstarch for crispiness
  • 1/2 tsp Salt for seasoning

Method
 

Preparation
  1. Prepare the sauce by combining soy sauce and sugar in a medium saucepan over medium heat until it thickens. Stir in garlic, green onion, sesame oil, red chili flakes, and white pepper, simmering for another minute.
  2. Marinate chicken with 4-5 tablespoons of garlic sauce, cornstarch, and vegetable oil, covering and letting it rest for at least 30 minutes.
  3. Make the dry coating by whisking flour, cornstarch, and salt in a bowl, then adding 3 tablespoons of reserved garlic sauce until well mixed.
  4. Heat vegetable oil in a deep frying pan, then fry marinated chicken pieces coated in the dry mixture until golden brown.
  5. Toss fried chicken in the remaining garlic sauce and serve hot.
