Method
 

Step-by-Step Instructions
  1. In a mixing jug, whisk together 350 ml of coconut milk, 1 ½ tablespoons of maple syrup, and ½ teaspoon of vanilla extract until well combined.
  2. Gradually add in 65 grams of chia seeds, stirring continuously. Let this mixture sit for about 4 hours or overnight in the refrigerator, stirring every hour.
  3. Peel and cut the pink dragon fruit into chunks, then blend until smooth. Set aside.
  4. Once the chia pudding has set, stir the dragon fruit puree into it until fully blended.
  5. Blend the Alphonso mango until smooth after removing the skin and pit.
  6. Layer the pudding in serving cups, starting with dragon fruit pudding, then mango puree, and optionally vanilla coconut yogurt and chopped mango on top.
  7. Serve immediately or store in the refrigerator for up to five days.
