For the Burgers
  • 4 count Hamburger Buns whole grain or gluten-free for healthier option
  • 1 pound 96/4 Lean Ground Beef or substitute with ground turkey
  • 2 tablespoons Dehydrated Onion or use fresh onion, adjusting cooking time
  • 1 tablespoon Worcestershire Sauce or soy sauce for gluten-free
  • 1 teaspoon Kosher Salt can substitute with regular salt
For the Toppings
  • 4 ounces Corned Beef or any deli corned beef
  • 4 slices Light Swiss Cheese or provolone/reduced-fat cheddar
  • 1/2 cup Sauerkraut drained
  • 1/4 cup Light Mayo as base for Thousand Island dressing
  • 2 tablespoons Ketchup look for reduced-sugar version
  • 1 tablespoon Sweet Relish or chopped pickles

Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together ¼ cup of light mayo, 2 tablespoons of ketchup, and 1 tablespoon of sweet relish until smooth.
  2. Chop 4 ounces of corned beef into bite-sized pieces. Heat a non-stick skillet over medium heat and add the corned beef. Sauté for about 5 minutes until crispy, then stir in ½ cup of drained sauerkraut.
  3. In a mixing bowl, combine 1 pound of 96/4 lean ground beef, 2 tablespoons of dehydrated onion, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of kosher salt. Mix and form into 4 patties.
  4. Preheat grill or pan over medium-high heat and lightly spray with cooking spray. Cook burger patties for 3 minutes on each side until internal temperature reaches 160°F.
  5. Remove pan from heat. Lay a slice of light Swiss cheese on each patty. Cover skillet for 1-2 minutes to melt cheese.
  6. Spread 1.5 tablespoons of the Thousand Island dressing on the bottom half of each bun. Add melted cheese-topped patties and top with warm sauerkraut and crispy corned beef.
