- In a small bowl, whisk together ¼ cup of light mayo, 2 tablespoons of ketchup, and 1 tablespoon of sweet relish until smooth.
- Chop 4 ounces of corned beef into bite-sized pieces. Heat a non-stick skillet over medium heat and add the corned beef. Sauté for about 5 minutes until crispy, then stir in ½ cup of drained sauerkraut.
- In a mixing bowl, combine 1 pound of 96/4 lean ground beef, 2 tablespoons of dehydrated onion, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of kosher salt. Mix and form into 4 patties.
- Preheat grill or pan over medium-high heat and lightly spray with cooking spray. Cook burger patties for 3 minutes on each side until internal temperature reaches 160°F.
- Remove pan from heat. Lay a slice of light Swiss cheese on each patty. Cover skillet for 1-2 minutes to melt cheese.
- Spread 1.5 tablespoons of the Thousand Island dressing on the bottom half of each bun. Add melted cheese-topped patties and top with warm sauerkraut and crispy corned beef.
