Step-by-Step Instructions
  1. Begin by creating the bold jerk marinade. In a blender, combine garlic, onion, Scotch bonnet peppers, fresh thyme, allspice, brown sugar, soy sauce, and lime juice until smooth. Massage the marinade into the chicken thighs thoroughly, cover, and refrigerate for at least 2 hours, preferably overnight.
  2. Prepare your slow cooker by spraying the insert with nonstick cooking spray. Place the marinated chicken thighs inside and pour in any remaining marinade.
  3. Set your slow cooker to low and cook for 6 to 8 hours, or on high for 3 to 4 hours. The chicken will absorb all the wonderful Caribbean flavors.
  4. About 30 minutes before serving, check that the chicken is fork-tender and reaches an internal temperature of 165°F. If not, cover and let it cook for another 30 minutes.
  5. When ready, shred the chicken using two forks or serve the thighs whole. Pair with steamed rice, black beans, or grilled veggies.
