Step‑by‑Step Instructions for Zoodle Egg Nests
  1. Spiralize 5-6 small zucchinis into noodle shapes, sprinkle with 1/2 teaspoon of salt and let sit while you preheat the oven to 400°F (204°C).
  2. Wrap the salted zoodles in paper towels and squeeze to remove excess water.
  3. Lightly spray a baking sheet with cooking spray and shape the drained zoodles into six nests, creating small wells in each.
  4. Crack one egg into the center of each zoodle nest, season with salt, pepper, and Parmesan cheese.
  5. Bake in the preheated oven for 6-8 minutes until the eggs are set but slightly undercooked in the center.
