Method
 

Step-by-Step Instructions
  1. Chop fresh shrimp into small bite-sized pieces and combine with fresh herbs in a mixing bowl.
  2. Whisk together flour, fish sauce, egg, and cold water in a separate bowl until smooth.
  3. Fold the shrimp mixture into the batter until well-coated.
  4. Heat approximately ½ inch of oil in a frying pan over medium-high heat.
  5. Drop spoonfuls of the shrimp batter into the hot oil and fry for about 3-4 minutes per side.
  6. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  7. Mix fish sauce, lime juice, sugar, and water in a small bowl for the dipping sauce.
  8. Serve the fritters hot with the Nuoc Cham dipping sauce.
