Instructions
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add 1 finely chopped onion and 3 finely chopped garlic cloves. Sauté for about 5 minutes until the onion is translucent.
  2. Incorporate 4 chopped fresh tomatoes into the pot and simmer for approximately 5 minutes until softened.
  3. Stir in 1 teaspoon of ground cumin, 1 teaspoon of paprika, and optional ½ teaspoon of smoked paprika. Season with salt and pepper. Cook for 1 minute.
  4. Add 1 cup of veggie broth and 1 tablespoon of tomato paste, followed by 1 can of drained white beans. Stir well and bring to a gentle simmer for about 5-10 minutes.
  5. Taste and adjust seasoning. Serve in bowls, garnishing with fresh herbs or yogurt if desired.
