Cooking Steps
- In a large bowl, combine the boneless, skinless chicken thighs with the jerk seasoning and olive oil. Mix well to ensure the chicken is evenly coated. Let marinate for at least 15 minutes.
- Preheat your grill to medium-high heat (about 400°F). Place the pineapple slices on the grill and cook for 3–4 minutes per side until grill marks form.
- Reduce grill temperature to medium and add marinated chicken. Grill for 6–7 minutes each side until internal temperature reaches 165°F. Let rest for 5 minutes.
- In a large bowl, combine the coleslaw mix with mayonnaise, apple cider vinegar, and honey (if using). Mix thoroughly and season with salt and pepper.
