Ingredients
  

For the Chicken
  • 1 pound Boneless, Skinless Chicken Thighs Can substitute with chicken breast
  • 2 tablespoons Jerk Seasoning Homemade blend for extra kick
  • 2 tablespoons Olive Oil Can substitute with vegetable oil
For the Pineapple
  • 1 whole Ripe Pineapple Canned pineapple can be used
For the Coleslaw
  • 4 cups Coleslaw Mix (Cabbage and Carrots) Pre-packaged or homemade
  • 1 cup Mayonnaise Greek yogurt is a lighter version
  • 2 tablespoons Apple Cider Vinegar White wine vinegar is a suitable substitute
  • 1 tablespoon Honey Optional for sweetness

  • 4 Burger Buns Any variety including gluten-free

Cooking Steps
  1. In a large bowl, combine the boneless, skinless chicken thighs with the jerk seasoning and olive oil. Mix well to ensure the chicken is evenly coated. Let marinate for at least 15 minutes.
  2. Preheat your grill to medium-high heat (about 400°F). Place the pineapple slices on the grill and cook for 3–4 minutes per side until grill marks form.
  3. Reduce grill temperature to medium and add marinated chicken. Grill for 6–7 minutes each side until internal temperature reaches 165°F. Let rest for 5 minutes.
  4. In a large bowl, combine the coleslaw mix with mayonnaise, apple cider vinegar, and honey (if using). Mix thoroughly and season with salt and pepper.
  5. Assemble the sandwiches by layering grilled chicken, grilled pineapple, and coleslaw on each burger bun.
  6. Optionally garnish with fresh cilantro or parsley and serve immediately.
