  • 2 cups frozen peas Thaw under cool running water
  • 1 cup diced cheddar cheese Can substitute with mozzarella or Jack cheese
  • 1 cup chopped celery
  • 1 cup chopped red bell pepper Optional to omit
  • 0.5 cup finely chopped red onion Can substitute with green onions
For the Dressing
  • 0.5 cup mayonnaise Greek yogurt can be used for a lighter version
  • 0.5 cup sour cream Can substitute with additional mayonnaise or Greek yogurt
  • 2 tablespoons apple cider vinegar Can use lemon juice instead
  • 1 tablespoon sugar Adjust based on taste
  • to taste salt and black pepper Adjust to personal preference

Method
 

Preparation
  1. Thaw the frozen peas in a fine mesh strainer under cool running water for about 3-5 minutes.
  2. In a large mixing bowl, combine the thawed peas, cheddar cheese, celery, red bell pepper, and red onion. Fold together gently.
  3. In a separate bowl, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper until smooth.
  4. Pour the dressing over the salad ingredients and toss gently to coat.
  5. Cover and refrigerate for at least one hour to allow flavors to meld.
  6. Before serving, gently stir the salad and transfer it to a serving dish.
