Ingredients
  

For the Dough
  • 1 package Refrigerated Pizza Dough or puff pastry for extra flakiness
For the Filling
  • 1 cup Cooked Ham, Diced or thick deli ham
  • 1 cup Shredded Mozzarella Cheese or Swiss or gouda
  • 1 cup Shredded Cheddar Cheese or pepper jack for spicy flare
  • 2 tablespoons Mayonnaise or Greek yogurt
  • 1 tablespoon Dijon Mustard or ranch dressing
  • Salt and Pepper to taste
For Assembly
  • 1 large Egg (beaten) for egg wash
  • 1 teaspoon Garlic Powder optional
  • 1 teaspoon Onion Powder optional
  • 1 tablespoon Melted Butter for brushing

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the refrigerated pizza dough on a floured surface to a rectangle about ¼ inch thick. Slice into six equal portions.
  3. In a large mixing bowl, combine diced ham, mozzarella, cheddar, mayonnaise, mustard, garlic powder, onion powder, and salt and pepper. Stir well.
  4. Scoop filling onto one half of each dough rectangle, leaving a ½ inch border.
  5. Fold the other half of the dough over the filling and seal the edges with a fork.
  6. Brush the tops of each pocket with the beaten egg.
  7. Bake the hot pockets for 15-18 minutes until golden brown.
  8. Remove from the oven, brush with melted butter, and let cool slightly before serving.
