Step-by-Step Instructions
  1. Preheat the grill for indirect cooking, about 15 minutes on high heat for gas grills or 30 minutes for charcoal.
  2. Prepare the relish by processing Castelvetrano olives and giardiniera until finely chopped but slightly chunky. Set aside.
  3. Place sausages on the cooler side of the grill and cook for 4–5 minutes per side until internal temperature reaches 150°F.
  4. Move sausages to the hot side and grill for an additional 2–3 minutes per side until charred and temperature reaches 160°F.
  5. Spritz brioche rolls with cooking spray and toast on the grill for about 1 minute.
  6. Assemble the sandwiches by placing grilled sausages in toasted rolls, topping with relish and aioli.
