Ingredients
  

For the Kofta Mixture
  • 1000 grams Ground Beef or Lamb Choose a mix with 20% fat for juiciness.
  • 1 large Onion Grate and squeeze out excess liquid.
  • 0.5 cup Fresh Parsley Add freshness; can substitute with mint.
  • 0.25 cup Fresh Cilantro Can be omitted if not preferred.
  • 2-3 cloves Garlic Adjust based on personal preference.
  • 1-2 Green Chilies Modify according to spice tolerance.
  • 1 tbsp Ground Cumin
  • 1 tbsp Ground Coriander
  • 1 tsp Ground Allspice
  • 0.5 tsp Ground Cinnamon Use sparingly.
  • 1 tbsp Sweet Paprika
  • 1 tsp Black Pepper Freshly ground is best.
  • 2 tsp Salt Or to taste.
  • 0.25 cup Breadcrumbs Optional, helps bind the mixture.
  • 1 Egg Optional binding agent.
For the Tahini Sauce
  • 0.5 cup Tahini Paste
  • 0.25 cup Lemon Juice
  • Water To adjust consistency.
For Serving
  • Pita Bread
  • Chopped Vegetables Tomatoes and cucumbers recommended.
  • Pickled Vegetables Optional.
  • Lemon Wedges
  • Fresh Parsley for Garnish

Method
 

Preparation
  1. Grate the onion into a bowl and squeeze out excess liquid.
  2. Combine the ground meat with grated onion, parsley, cilantro, garlic, and spices.
  3. Knead the mixture for 5-7 minutes until sticky and cohesive.
  4. If using, mix in breadcrumbs and/or egg thoroughly.
  5. Cover and refrigerate for at least 30 minutes.
  6. Soak wooden skewers in water for 30 minutes.
Cooking
  1. Shape the mixture around soaked skewers into elongated forms.
  2. Use wet hands to smooth the surfaces.
  3. Preheat grill to medium-high heat and cook skewers for 8-10 minutes, turning frequently.
  4. Rest grilled kebabs for 5 minutes.
  5. Prepare the tahini sauce by whisking tahini, lemon juice, and water.
  6. Warm pita bread for 1-2 minutes per side.
  7. Assemble by placing kofta on pita, topping with vegetables and tahini sauce.
  8. Serve with lemon wedges.
