Preparation
- Grate the onion into a bowl and squeeze out excess liquid.
- Combine the ground meat with grated onion, parsley, cilantro, garlic, and spices.
- Knead the mixture for 5-7 minutes until sticky and cohesive.
- If using, mix in breadcrumbs and/or egg thoroughly.
- Cover and refrigerate for at least 30 minutes.
- Soak wooden skewers in water for 30 minutes.
Cooking
- Shape the mixture around soaked skewers into elongated forms.
- Use wet hands to smooth the surfaces.
- Preheat grill to medium-high heat and cook skewers for 8-10 minutes, turning frequently.
- Rest grilled kebabs for 5 minutes.
- Prepare the tahini sauce by whisking tahini, lemon juice, and water.
- Warm pita bread for 1-2 minutes per side.
- Assemble by placing kofta on pita, topping with vegetables and tahini sauce.
- Serve with lemon wedges.
