  1. In a medium mixing bowl, combine 1 cup of graham cracker crumbs with ½ cup of melted unsalted butter until fully coated. Reserve about ½ cup for later layering.
  2. Chill your mixing bowl and beaters for about 10 minutes. Beat 1 cup of heavy whipping cream until stiff peaks form, about 2 to 3 minutes.
  3. In another large mixing bowl, beat 8 ounces of softened cream cheese until smooth. Mix in ½ cup of powdered sugar, ¼ cup of key lime juice, 2 teaspoons of lime zest, and 1 teaspoon of vanilla extract.
  4. Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.
  5. Layer half of the creamy lime filling over the graham cracker crust, then sprinkle with reserved crumbs.
  6. Add the remaining lime filling on top, smoothing it out, and finish with the last bit of graham cracker crumbs and extra lime zest.
  7. Cover with plastic wrap and refrigerate for at least 2 hours before serving.
