Preparation Steps
- In a medium mixing bowl, combine 1 cup of graham cracker crumbs with ½ cup of melted unsalted butter until fully coated. Reserve about ½ cup for later layering.
- Chill your mixing bowl and beaters for about 10 minutes. Beat 1 cup of heavy whipping cream until stiff peaks form, about 2 to 3 minutes.
- In another large mixing bowl, beat 8 ounces of softened cream cheese until smooth. Mix in ½ cup of powdered sugar, ¼ cup of key lime juice, 2 teaspoons of lime zest, and 1 teaspoon of vanilla extract.
- Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.
- Layer half of the creamy lime filling over the graham cracker crust, then sprinkle with reserved crumbs.
- Add the remaining lime filling on top, smoothing it out, and finish with the last bit of graham cracker crumbs and extra lime zest.
- Cover with plastic wrap and refrigerate for at least 2 hours before serving.
