Ingredients
  

  • 8 ounces of rotini pasta
  • 1 large cucumber diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, diced cucumber, cherry tomatoes, red onion, feta cheese, parsley, and basil.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss gently to combine all ingredients.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve chilled or at room temperature, garnished with additional herbs if desired.
