Preparation Steps
- In a mixing bowl, blend together oyster sauce, fish sauce, grated garlic, and ginger until well combined. Coat the beef steak thoroughly and let marinate for at least 30 minutes.
- In a dry skillet, heat over medium heat and add glutinous rice. Stir constantly until golden brown (5-7 minutes). Cool and blend into a coarse powder.
- In a clean bowl, combine fish sauce, lime juice, tamarind paste, evaporated sugar, chili flakes, cilantro, and 2 teaspoons of toasted rice powder. Stir until well combined.
- Preheat grill pan over medium-high heat. Grill marinated beef for approximately 5 minutes on each side until desired doneness.
- Let steak rest for 10 minutes, then slice against the grain. Season with white pepper and toasted rice powder.
- Serve sliced beef on a platter with fresh veggies and the Nam Jim Jaew sauce for dipping.
