  • 1 pound Beef Steak 1-inch thick for best results
  • 1 tablespoon Oyster Sauce adds umami flavor
  • 1 tablespoon Fish Sauce for authentic savoriness
  • 2 cloves Garlic freshly grated
  • 1 inch Ginger fresh for maximum kick
For the Nam Jim Jaew Sauce
  • 1/2 cup Glutinous Rice toasted and ground
  • 1/4 cup Lime Juice freshly squeezed
  • 1 tablespoon Tamarind Paste or substitute
  • 1 tablespoon Evaporated Cane Sugar or alternatives like honey
  • 1 teaspoon Chili Flakes adjust heat to taste
For Garnish
  • 1/4 cup Cilantro or substitute with scallions
  • 2 tablespoons Scallion/Shallots for added flavor

Method
 

Preparation Steps
  1. In a mixing bowl, blend together oyster sauce, fish sauce, grated garlic, and ginger until well combined. Coat the beef steak thoroughly and let marinate for at least 30 minutes.
  2. In a dry skillet, heat over medium heat and add glutinous rice. Stir constantly until golden brown (5-7 minutes). Cool and blend into a coarse powder.
  3. In a clean bowl, combine fish sauce, lime juice, tamarind paste, evaporated sugar, chili flakes, cilantro, and 2 teaspoons of toasted rice powder. Stir until well combined.
  4. Preheat grill pan over medium-high heat. Grill marinated beef for approximately 5 minutes on each side until desired doneness.
  5. Let steak rest for 10 minutes, then slice against the grain. Season with white pepper and toasted rice powder.
  6. Serve sliced beef on a platter with fresh veggies and the Nam Jim Jaew sauce for dipping.
