Equipment

  • Mixing Bowl
  • Baking Sheet
  • wire rack
  • zip-top bag
  • small saucepan
  • silicone brush

Method

Step-by-Step Instructions
  1. Prepare Marinade: In a medium mixing bowl, combine fish sauce, light brown sugar, crushed garlic cloves, and vegetable oil. Whisk until well-blended.
  2. Coat Chicken Wings: Add split chicken wing pieces to a large zip-top bag or bowl, pouring in half of the marinade. Seal the bag and massage the chicken.
  3. Marinate: Place coated wings in the refrigerator and let them marinate for 2 to 3 hours.
  4. Preheat Oven: Preheat your oven to 450°F (230°C) and prepare a baking sheet with parchment paper and a wire rack.
  5. Bake Wings: Arrange the marinated chicken wings skin-side up on the wire rack. Bake for about 30 minutes until crispy and golden brown.
  6. Prepare Glaze: Take reserved marinade, bring it to a boil, then simmer for 5 to 7 minutes until it thickens slightly.
  7. Baste Wings: Brush baked wings with reduced marinade and return to the oven for an additional 5 minutes.
  8. Serve: Remove wings from the oven, baste with more glaze if desired, and garnish with peanuts and cilantro. Serve hot.
