Ingredients
  

  • 1 cup finely shredded cabbage
  • 1 cup grated carrots
  • 1 cup bean sprouts
  • 1/2 cup finely chopped green onions
  • 1/2 cup finely chopped bell pepper
  • 2 cloves garlic minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package spring roll wrappers about 20 wrappers
  • Vegetable oil for frying

Method
 

  1. In a large mixing bowl, combine the cabbage, carrots, bean sprouts, green onions, bell pepper, garlic, soy sauce, salt, and black pepper. Mix well until all the vegetables are evenly coated with the seasonings.
  2. Lay a spring roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the vegetable mixture near the corner closest to you.
  3. Fold the corner over the filling, then fold in the sides and roll tightly to form a log. Seal the edge with a little water. Repeat with the remaining wrappers and filling.
  4. Heat about 2 inches of vegetable oil in a deep skillet or pot over medium heat until hot (about 350°F).
  5. Carefully add a few lumpia at a time to the hot oil, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
  6. Serve hot with sweet chili sauce or soy sauce for dipping.
