Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly spray it with cooking spray.
In a mixing bowl, combine the cottage cheese, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated.
Using a tablespoon, scoop the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each scoop slightly with the back of the spoon to form thin rounds.
Bake in the preheated oven for 15-20 minutes or until the edges are golden brown and crispy.
Remove from the oven and let the chips cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This will help them crisp up even more.
