  • 2 units eggs beaten, can substitute with flax eggs for vegan option

Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of granulated sugar, and 1/2 cup of cold, unsalted butter. Mix until it resembles coarse crumbs.
  2. Preheat your oven to 350°F (175°C). Bake the crust for 15 minutes until lightly golden around the edges.
  3. While the crust is baking, whisk together 1/2 cup of lemon juice, 1 tablespoon of lemon zest, and 2 beaten eggs in a bowl. Gradually add 1 cup of sugar, whisking until combined, then fold in 1/2 cup of raspberry jam.
  4. After the crust is baked and cooled for a few minutes, pour the filling over it and spread evenly.
  5. Return to the oven and bake for an additional 25-30 minutes until the filling is set and slightly puffed.
  6. Allow the dish to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
