  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt to taste
  • 1/2 teaspoon Pepper to taste
For Frying
  • 2 cups Vegetable Oil for frying, can substitute with canola or peanut oil
For Garnish
  • 1 tablespoon Parsley chopped, optional

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine one can of sweet corn, finely chopped jalapenos, shredded cheese, flour, baking powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
  2. In another bowl, whisk together two large eggs until frothy, then pour them into the dry mixture. Gently fold the ingredients together until just combined.
  3. In a heavy pot or deep fryer, heat vegetable oil to 350°F (175°C), ensuring at least two inches of oil for proper frying.
  4. Once the oil is hot, carefully drop 4-5 spoonfuls of the batter into the bubbling oil. Fry the nuggets for about 2-3 minutes or until golden brown.
  5. Using a slotted spoon, carefully remove the fried nuggets from the oil and place them on a paper towel-lined plate to drain excess oil. Garnish with fresh parsley and serve immediately.
