Step-by-Step Instructions for Crispy Greek Tomato Fritters
  1. Finely chop 2-3 fresh, ripe tomatoes and place them in a large mixing bowl. Remove excess seeds.
  2. Add the finely chopped red onion and 2 minced garlic cloves. Grate in the zest of 1 lemon and combine gently.
  3. Chop a handful of fresh dill and parsley and add to the mixture. Stir until everything is evenly combined.
  4. Gradually sift in 1 cup of plain flour and 1 teaspoon of baking powder while stirring. Season with salt and black pepper to taste.
  5. In a large frying pan, heat ½ cup of olive oil over medium heat until hot.
