Ingredients
  

For the Chicken:
  • 4 boneless skinless chicken breasts (or thighs)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
For the Potatoes:
  • 1.5 pounds baby Yukon Gold or red potatoes halved
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • cup Parmesan cheese grated
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Optional Garnish:
  • 1 tablespoon fresh parsley chopped

Method
 

Preheat the Oven:
  1. Set your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
Prepare the Chicken:
  1. Pat the chicken dry with paper towels to help the seasoning stick.
  2. In a small bowl, mix the Italian seasoning, smoked paprika, salt, and pepper.
  3. Rub the chicken with olive oil and coat it evenly with the seasoning mixture.
Season the Potatoes:
  1. In a large bowl, toss the halved potatoes with olive oil, minced garlic, Parmesan cheese, salt, and pepper. Ensure each piece is well-coated.
Assemble on the Baking Sheet:
  1. Arrange the seasoned chicken on one side of the baking sheet.
  2. Spread the potatoes on the other side, ensuring they are in a single layer for even cooking.
Bake:
  1. Roast in the preheated oven for 25-30 minutes, flipping the potatoes halfway through for even crisping.
  2. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
Finish with Cheese and Broil:
  1. In the last 5 minutes of baking, sprinkle additional Parmesan cheese over the chicken and potatoes.
  2. Broil briefly to achieve a golden, crispy crust.
Garnish and Serve:
  1. Remove the baking sheet from the oven. Garnish with freshly chopped parsley for added freshness.
  2. Serve immediately and enjoy!

  • Cut the potatoes into similar sizes to ensure even cooking.
  • Freshly grated Parmesan and minced garlic enhance the flavor significantly.
  • Add vegetables like zucchini or carrots to the baking sheet for a colorful twist.
