Sear the Steak: In the same pan, add steak bites in a single layer. Cook for 2-3 minutes per side until browned. Remove and set aside.
Make the Garlic Butter Sauce: Lower heat to medium, pour in beef broth, and deglaze the pan by scraping up any flavorful bits. Stir in melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper. Let simmer for 1-2 minutes.
Combine & Serve: Return potatoes and steak bites to the pan, toss everything in the garlic butter sauce, and cook for another 2 minutes. Garnish with fresh parsley and serve immediately
