Preheat your oven to 400°F.
Pat the duck legs dry with paper towels to ensure crispy skin.
In a small bowl, mix the olive oil, dukkah spice blend, salt, and black pepper.
Rub the spice mixture all over the duck legs, making sure to coat them evenly.
Place the duck legs skin-side up on a baking sheet lined with parchment paper.
Roast in the preheated oven for 45-50 minutes, or until the skin is crispy and the internal temperature reaches 165°F.
In the last 10 minutes of roasting, mix the honey and apple cider vinegar in a small bowl. Brush this mixture over the duck legs for added flavor and glaze.
Once done, remove the duck legs from the oven and let them rest for 5-10 minutes before serving.
Garnish with fresh herbs before serving.
