  • 1 tablespoon honey

  • 1 teaspoon sriracha or more to taste
  • 1 clove garlic minced
  • 1 tablespoon chopped fresh cilantro for garnish
  • 1 tablespoon chopped peanuts for garnish

Method
 

  1. In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, sriracha, and minced garlic until smooth and well combined.
  2. Taste the sauce and adjust the spiciness by adding more sriracha if desired.
  3. In a large bowl, combine the sliced cucumbers with the spicy peanut sauce. Toss until the cucumbers are evenly coated.
  4. Let the cucumbers marinate in the sauce for at least 15 minutes to allow the flavors to meld.
  5. Serve the cucumbers in a dish, garnished with chopped cilantro and peanuts.
