- Prepare the 'Honey' Mustard Sauce by whisking together neutral oil, agave or maple syrup, and yellow or Dijon mustard, seasoning with salt and pepper. Set aside.
- Drain the extra firm tofu, wrap in a kitchen towel, and press to remove moisture for about 10 minutes. Slice into 1-inch strips.
- In a bowl, mix all-purpose flour, cornstarch, baking powder, salt, and optional paprika. Gradually mix in water to form a smooth batter.
- Dip each tofu strip into the batter, then transfer to panko breadcrumbs, pressing gently to coat.
- Preheat oven to 350°F (175°C). Place coated tofu on a lined baking tray, spray or brush with neutral oil, and bake for 30-35 minutes, flipping halfway.
- After baking, brush the tenders with the prepared 'honey' mustard sauce and return to the oven for an additional 5-8 minutes.
