Step-by-Step Instructions for Creamy Salmon Pasta
  1. Preheat your oven to 400ºF (200ºC). Boil salted water and cook fettuccine according to package instructions for 10-12 minutes. Reserve 1 cup of water, then drain.
  2. On a lined sheet pan, place fresh salmon skin-side up. Drizzle with olive oil and season with salt and pepper. Scatter cherry tomatoes around the salmon.
  3. Roast in the oven for 10-12 minutes until the salmon flakes easily and the tomatoes become blistered and juicy.
  4. In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Slowly pour in heavy cream and let it simmer for 3-4 minutes until thickened.
  5. Stir in parmesan cheese and ground black pepper, cooking for another 2-3 minutes until the cheese melts and forms a creamy sauce.
  6. Add cooked fettuccine to the creamy sauce and toss gently. Add reserved pasta water if the sauce is too thick. Stir in baby spinach, wilt it, then fold in roasted salmon and tomatoes.
  7. Plate your Creamy Salmon Pasta, garnishing with additional parmesan cheese if desired. Serve warm and enjoy!
