Ingredients
  

For the Pasta:
  • 12 oz pasta penne, fettuccine, or your favorite variety
  • Salted water for boiling
For the Creamy Pumpkin Sauce:
  • 1 cup pumpkin puree
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tbsp butter
  • Salt pepper, and nutmeg (to taste)
  • 6-8 fresh sage leaves

Method
 

 Cook the Pasta
  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to the package instructions until al dente.
  3. Drain the pasta, reserving ½ cup of pasta water, and set aside.
2. Prepare the Creamy Pumpkin Sauce
  1. Melt the butter in a large skillet over medium heat.
  2. Add the minced garlic and sage leaves. Sauté for 1-2 minutes until fragrant.
  3. Stir in the pumpkin puree, heavy cream, and grated Parmesan cheese. Mix until smooth.
  4. Season with salt, pepper, and a pinch of nutmeg to taste. Simmer for 5-7 minutes, stirring occasionally, until the sauce thickens.
3. Combine Pasta and Sauce
  1. Add the cooked pasta to the skillet with the sauce.
  2. Toss until the pasta is evenly coated. Use reserved pasta water, a little at a time, to adjust the sauce’s consistency.
4. Serve and Garnish
  1. Divide the pasta into serving bowls.
  2. Garnish with extra Parmesan cheese, freshly cracked black pepper, and chopped sage, if desired.
  3. Serve immediately and enjoy!
