  • 12 pieces Yellow Corn Tortillas Cut them to fit as needed.
Optional Toppings
  • 1/4 cup Chopped Fresh Cilantro For garnish.
  • 1/2 cup Sour Cream Serve on the side.

Method
 

Step-by-Step Instructions for Green Chile Chicken Enchilada Casserole
  1. Preheat your oven to 350°F (175°C). Gather all your ingredients and equipment.
  2. Combine the shredded chicken, half of the enchilada sauce, cream cheese, green chiles, and taco seasoning in a large bowl.
  3. Pour ½ cup of the remaining enchilada sauce into the bottom of a 9x13 baking dish.
  4. Place four tortillas in the bottom of the sauced baking dish, cutting them as necessary.
  5. Spread half of the chicken mixture over the tortillas, sprinkle with 1 cup of shredded cheese, and drizzle with enchilada sauce.
  6. Layer with another four tortillas, the remaining chicken mixture, another cup of cheese, and more enchilada sauce.
  7. Finish with the last four tortillas on top, drizzle with enchilada sauce, and sprinkle the final cup of shredded cheese.
  8. Cover with aluminum foil and bake for 20-30 minutes until heated through and bubbly.
  9. Remove foil after baking and broil for an additional 10-15 minutes until the top is golden and bubbly.
  10. Allow the casserole to cool for a few minutes before serving, garnished with cilantro and sour cream if desired.
