  • 2 cups diced potatoes about 1 pound
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 10 minutes, or until just tender. Drain and set aside.
  3. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt, pepper, thyme, and paprika. Cook for about 5-7 minutes, or until the chicken is browned and cooked through.
  4. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  5. Pour in the heavy cream and stir to combine. Bring the mixture to a simmer and let it cook for 2-3 minutes.
  6. Stir in the cooked potatoes and half of the shredded cheddar cheese. Mix until everything is well combined.
  7. Sprinkle the remaining cheddar cheese on top and transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the cheese is bubbly and golden.
  8. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
