Ingredients

  • 1 cup rolled oats
  • 2 cups milk or almond milk for a dairy-free option
  • 2 large eggs
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins or chopped nuts optional
  • Fresh fruit for topping such as sliced bananas or berries

Method

  1. In a medium saucepan, combine the rolled oats and milk. Bring to a gentle boil over medium heat, stirring occasionally.
  2. Once boiling, reduce the heat to low and simmer for about 5 minutes, or until the oats are tender and the mixture is creamy.
  3. In a separate bowl, whisk together the eggs, brown sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Gradually stir the egg mixture into the oatmeal, cooking for an additional 2-3 minutes until the mixture thickens slightly.
  5. If desired, stir in raisins or chopped nuts for added texture.
  6. Remove from heat and let cool for a minute before serving. Top with fresh fruit as desired.
