In a separate bowl, whisk together the eggs, brown sugar, vanilla extract, cinnamon, and salt until well combined.
Gradually stir the egg mixture into the oatmeal, cooking for an additional 2-3 minutes until the mixture thickens slightly.
If desired, stir in raisins or chopped nuts for added texture.
Remove from heat and let cool for a minute before serving. Top with fresh fruit as desired.
