Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly coat a baking dish with cooking spray.
  2. In a large skillet over medium heat, cook the diced thick-cut bacon until crispy, about 5-7 minutes.
  3. Add vegetable oil to the skillet with reserved bacon fat and heat over medium-high. Sear pounded chicken breasts until golden brown, about 2-3 minutes on each side.
  4. Arrange the seared chicken in the prepared baking dish. Mix cream cheese, garlic powder, dill, and chives in a bowl until smooth. Spread over chicken.
  5. Sprinkle half the bacon over the cream cheese-covered chicken, followed by shredded cheddar cheese.
  6. Bake uncovered for 15 minutes until cheese is bubbly and chicken reaches an internal temperature of 165°F (74°C).
  7. Remove from oven and garnish with remaining bacon, parsley, and scallions. Serve immediately.
