Ingredients
  

Main Ingredients:
  • 1-2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 15-ounce can diced tomatoes
  • 1 15-ounce can tomato sauce
  • 3 ounces ¼ cup tomato paste
  • 4 cups chicken broth
  • 1-2 cups water as needed
Seasonings & Flavor Enhancers:
  • 1 tablespoon Italian seasoning
  • 1 teaspoon sea salt or to taste
  • Black pepper to taste
Pasta & Cheesy Toppings:
  • 8 ounces bowtie pasta or pasta of choice
  • ½ cup ricotta cheese
  • ½ cup mozzarella cheese shredded
  • ¼ cup Parmesan cheese grated
  • ¼ cup fresh parsley chopped

Method
 

Sauté the Beef & Aromatics:
  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it apart as it cooks.
  3. Stir in diced onions and minced garlic, cooking for 2-3 minutes until fragrant.
2️⃣ Build the Soup Base:
  1. Add diced tomatoes, tomato sauce, and tomato paste.
  2. Pour in chicken broth and water.
  3. Stir in Italian seasoning, salt, and black pepper.
  4. Simmer for 15-20 minutes to develop the flavors.
3️⃣ Cook the Pasta:
  1. Add uncooked bowtie pasta directly to the soup.
  2. Simmer for 8-10 minutes until pasta is tender.
4️⃣ Finish with Cheese:
  1. Remove from heat and stir in ricotta cheese.
  2. Sprinkle mozzarella and Parmesan on top, allowing it to melt.
  3. Garnish with fresh parsley and serve hot!

Notes

  • For a creamier texture, stir in a splash of heavy cream or mascarpone cheese.
  • To thicken the soup, simmer longer or add a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water).
