- Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.
- Cut the thawed filo pastry sheets into 36 squares.
- Brush a filo square with melted butter, add a slice of Brie, a teaspoon of cranberry sauce, and sprinkle almond flakes.
- Roll the filo pastry around the filling, pinching the ends to seal.
- Transfer rolled crackers to the baking trays and brush with remaining melted butter.
- Bake for 15–20 minutes until golden brown.
- Garnish with fresh rosemary or chives before serving.
