  • 1/4 cup diced bell pepper any color
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 4 large lettuce leaves romaine or iceberg
  • 1 tablespoon olive oil optional

Method
 

  1. In a mixing bowl, combine the cottage cheese, shredded cheddar cheese, chopped spinach, diced bell pepper, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly combined.
  2. Lay out the large lettuce leaves on a clean surface. If desired, drizzle a little olive oil on each leaf for added flavor.
  3. Spoon a generous amount of the cottage cheese mixture onto each lettuce leaf.
  4. Roll the lettuce leaves around the filling to create wraps. Secure with a toothpick if necessary.
  5. Serve immediately or refrigerate for up to 30 minutes before serving for a chilled option.
