Prep the Shrimp:If using frozen shrimp, thaw by soaking in warm water for 10 minutes. Drain well and gently pat dry.
Dice the Shrimp:Halve small shrimp lengthwise or quarter larger shrimp, then finely dice into small pieces.
Marinate in Lime Juice:Place diced shrimp in a bowl and cover with lime juice.
For cooked shrimp, marinate for 15 minutes.
For raw shrimp, marinate for 1.5 to 2 hours, or until shrimp turns pink and opaque.
Chop the Veggies:Dice tomato, avocado, onion, cilantro, and jalapeño. Dice avocado last to keep it fresh and vibrant.
Combine and Season:Add all chopped vegetables to the marinated shrimp and gently stir to combine. Season with salt and pepper to taste.Tip: Taste with a tortilla chip before adding more salt.
Serve Chilled:Serve immediately or chill in the fridge until ready to serve. Best enjoyed with tortilla chips, on tostadas, or as a taco filling.
