Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup melted butter
  • 2 tbsp sugar
For the Filling:
  • 3 8 oz packages cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour
  • ½ cup pineapple juice
  • ½ cup orange juice
  • Orange food coloring optional

  • Fresh pineapple slices as desired
  • Orange slices as desired
  • Fresh mint leaves as desired

Method
 

Prepare the Crust:
  1. Preheat the oven to 325°F (163°C).
  2. In a medium mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until evenly combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes and set aside to cool.
Make the Cheesecake Filling:
  1. Beat softened cream cheese and sugar in a large bowl until smooth and creamy.
  2. Add vanilla extract and mix thoroughly.
  3. Incorporate eggs one at a time, blending well after each addition.
  4. Stir in sour cream and flour until fully combined.
Create Citrus Layers:
  1. Divide the filling evenly into two bowls.
  2. Mix pineapple juice into one bowl and orange juice into the other. Add orange food coloring to the orange layer for a vibrant hue, if desired.
Assemble the Cheesecake:
  1. Pour the pineapple layer over the prepared crust, spreading evenly.
  2. Gently pour the orange layer on top.
  3. Use a knife or skewer to swirl the two layers together, creating a marbled effect.
Bake the Cheesecake:
  1. Bake the cheesecake in the preheated oven for 50–60 minutes, or until the center is set but slightly jiggly.
  2. Turn off the oven and crack the door open to allow the cheesecake to cool gradually for 1 hour.
