Ingredients
  

  • 1 cup rolled oats
  • 1 cup vanilla protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 cup unsweetened almond milk or any milk of choice
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts or pecans optional
  • 1/4 cup raisins optional

Method
 

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, combine the rolled oats, protein powder, baking powder, cinnamon, and salt. Stir until well mixed.
  3. In another bowl, whisk together the honey (or maple syrup), applesauce, eggs, almond milk, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. If using, fold in the chopped nuts and raisins.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
