- In a large mixing bowl, whisk together flour, sugar, cinnamon, baking powder, baking soda, and salt until well combined.
- In a separate bowl, blend together oil, buttermilk, vanilla extract, and egg until smooth.
- In a medium saucepan, combine peaches, brown sugar, cinnamon, nutmeg, cornstarch, salt, and orange juice, and cook over medium heat for about 5 minutes until thickened.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for 10 minutes.
- Preheat a non-stick skillet, lightly grease it, and ladle about 1/4 cup of batter for each pancake. Cook for approximately 3 minutes.
- Flip the pancakes and continue to cook for an additional 1.5 minutes until golden brown.
- Check the peach filling consistency and simmer longer if too runny.
- Serve pancakes topped with warm peach compote and maple syrup, optionally adding whipped cream or ice cream.
