  • 1/4 cup oil olive oil suggested, any neutral oil works
  • 1.5-2 tbsp vegetarian mushroom oyster sauce to taste, hoisin sauce can be a replacement
  • 1 tbsp dark soy sauce regular soy sauce can be used
For the Brightness
  • 2 tbsp lime juice juice from 1 lime, use fresh for best flavor

Method
 

Step-by-Step Instructions
  1. Cook the dry noodles in a pot of salted boiling water according to package instructions, aiming for 2 minutes less than al dente. Drain and rinse under cold water.
  2. Combine chopped cilantro, minced garlic, and shallot or red onion in a heat-proof bowl. Add sugar, curry powder, and chili powder, stirring well.
  3. Heat oil in a small pot over medium to medium-high heat until hot and shimmering.
  4. Carefully pour hot oil over the cilantro mixture in the bowl and stir thoroughly.
  5. Add vegetarian oyster sauce, dark soy sauce, and fresh lime juice to the bowl and stir well.
  6. Toss the cooked noodles into the bowl with the sauce and mix well.
  7. Taste and adjust seasoning as needed with more vegetarian oyster sauce or chili oil.
  8. Plate the noodles and garnish with additional fresh cilantro or lime zest.
