  • 6 cups chopped Romaine lettuce2 cups chopped cooked chicken grilled or rotisserie6 slices bacon, cooked and crumbled1 avocado, diced2 hard-boiled eggs, chopped1 cup cherry tomatoes, halved1/2 cup blue cheese crumbles1/4 cup thinly sliced red onion1/4 cup red wine vinegar1 tablespoon Dijon mustard1 garlic clove, minced1/2 teaspoon sugar1/2 teaspoon salt1/4 teaspoon black pepper1/3 cup olive oil

Method
 

  1. Spread the chopped Romaine lettuce across a large serving bowl or platter to form the base.
  2. Layer the chopped chicken, crumbled bacon, diced avocado, chopped eggs, cherry tomatoes, blue cheese crumbles, and red onion in neat rows or sections over the lettuce.
  3. In a small bowl or jar, whisk together red wine vinegar, Dijon mustard, minced garlic, sugar, salt, and pepper. Slowly drizzle in the olive oil while whisking until the vinaigrette emulsifies.

Notes

You can use rotisserie chicken for convenience or grill your own for extra flavor.
Feel free to swap out the blue cheese for feta or goat cheese depending on your preference.
Add sliced cucumbers or sweet corn for a veggie boost.
For a vegetarian version, omit bacon and use plant-based protein.
