Ingredients
  

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 cup Italian bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh parsley chopped
  • Wooden skewers soaked in water for 30 minutes

Method
 

  1. Cut the chicken into 1-inch cubes and set aside.
  2. In a large bowl, combine the bread crumbs, Parmesan cheese, garlic powder, onion powder, oregano, basil, salt, and pepper.
  3. In another bowl, whisk together the olive oil and lemon juice.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the chicken cubes onto the soaked skewers, leaving a little space between each piece.
  6. Brush the skewers with the olive oil and lemon juice mixture, then roll them in the bread crumb mixture until well coated.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  8. Remove the skewers from the grill and sprinkle with fresh parsley before serving.
